I am rollin' right along!! I've been vegan 1 week, and it's going really well! I made a cheese sauce with nutritional yeast that came out MUCH better than I expected, made an edamame-spinach-potato salad with Veganaise instead of mayo, and am putting the finishing touches on a roasted butternut squash pizza that Vegetarian Times had on the cover this month (minus the Parmesean cheese.)
I haven't been counting calories AT ALL and have generally been making a pig of myself with garlic hummus on everything but have lost three pounds anyway. AND I never feel bloated. AND I seem to have more energy. AND my jeans seem to fit better in the tummy, but hat may be my imagination.
Eating out was a bit of a challenge. A friend of mine was in town who LOVES to eat at Eggspectations, and I agreed to met there without thinking. I looked up the menu online and decided what I would order and how before I even got there and it was fine. Another time my husband offered to take me for a burger and then went "oh...yeah. Maybe not." we did a little research and wound up finding this great little Medditeranian place to go to where I could get a veggie wrap. If we hadn't been looking for something I could eat, we never would have found it!
Am reading The Omnivore's Dilemma to learn where food comes from....it's very good and frankly, terrifying. I'm glad I made the choice I did. I spent all night tonight cooking and it was great. My husband's calling me "his little Vegan". It's cute!
Week two, here I come!!!!
